Ingredients for Nigerian Tinned Tomato Stew

  • 1,600g tinned tomato puree
  • 400g (14oz) tinned tomato paste
  • Sunflower oil or vegetable oil: a generous quantity (see the video below)
  • 1.2kg hard chicken (hen)
  • 1kg beef
  • 2 onions
  • 1 tablespoon thyme
  • 2 tablespoons Nigerian curry powder
  • Habanero or Cayenne pepper (to taste)
  • Salt (to taste)

Serve with boiled white rice, boiled yam etc.
