Ingredients for Nigerian Tinned Tomato Stew
- 1,600g tinned tomato puree
- 400g (14oz) tinned tomato paste
- Sunflower oil or vegetable oil: a generous quantity (see the video below)
- 1.2kg hard chicken (hen)
- 1kg beef
- 2 onions
- 1 tablespoon thyme
- 2 tablespoons Nigerian curry powder
- Habanero or Cayenne pepper (to taste)
- Salt (to taste)
Serve with boiled white rice, boiled yam etc.
