Igbotic Pie Ingredients

For the dough

  • 2½ cups (360g) plain flour (APF)
  • 1 (265g, 9.3oz) ripe plantain
  • 2 tbsp red palm oil
  • 1 tsp baking powder
  • 1 tsp salt (or to taste)
  • 1 egg for sealing and glazing

For the filling

  • 1 cup boiled brown beans
  • 2 pieces of mackerel fish
  • 1 red onion
  • 1 seasoning cube
  • Red palm oil
  • Habanero pepper
  • Salt to taste

Notes on the Igbotic Pie Ingredients

  1. You can also use boiled black eyed beans for the filling.
  2. You can add more fish than beans.
  3. No two plantains are equal, some will take more flour.
  4. When using overripe plantain, you will need more flour.
