Potato Fufu


I already have a Potato Fufu recipe on this website but it is pound in a mortar and since then I have been getting requests to upload a potato fufu recipe that is not pound in a mortar because lots of people, mainly those who live outside Nigeria, do not have mortars.

If you are one of those who sent in that request or you are looking for a new fufu meal to add to your looooong list of fufu meals, I think I have something for you.

Ingredients for Potato Fufu

  • 5 medium Irish Potatoes (spuds)
  • ¾ cup oats
  • Cool water (see below for quantity)

Notes on the Potato Fufu Ingredients

  1. The oat can be oat flour or rolled oats.
  2. Irish potatoes do not contain enough starch to make a mouldable fufu meal. It has a lower amylose and amylopectin ratio compared to other tubers like yam, cassava and sweet potatoes hence why we need a binder, in this case, oat flour or rolled oats.
  3. For the binder, you can use any other flour (with or without gluten) that can make the Irish potatoes mouldable such as: semolina flour, corn flour, all purpose flour (which I used in the other Potato Fufu recipe), cassava flour and many more.

Directions for making Potato Fufu

  1. Peel the potatoes, rinse and grate.
  2. Put in a blender and blend. You need to add just enough water to help the blades of your blender move. See the video below.
  3. Once it starts blending, add the oats bit by bit through the blender peep hole. Keep blending till everything is smooth and well combined.
  4. Pour the blend into a pot and start cooking on medium heat, stirring it all the time.
  5. Keep stirring till it comes together as a thick dough with no lumps.
  6. Pour a few drops of water, cover and cook till it steams well.
  7. Mix again and it’s done.

That's it! Serve immediately with your favourite Nigerian Soup.
